It’s only messy because it’s so easy to make and I might have been dancing to some Little Dragon whilst creating this.
So a lot of these recipes I post are really just thrown together from intuition and love of vegetarianism. Not all of my recipes are vegan. Sometimes there is a little organic cheese or free range eggs. I honestly tried being vegan for 3 months. Wasn’t well. Vegetarian just works for my body and where it is at today.
This recipe IS vegan though! It also only 7 ingredients excluding a few spices. I hope it as deliciously- messy for you. Have fun when creating your food.

Messy-Vegan Asparagus & Basil Pasta
- 1 Little bag of cherry tomatoes
- 1 Big handful fresh basil leaves
- 1 red onion
- 1 small garlic clove
- 1 can Asparagus
- 1 can Italian tomato
- 1 bag of penne
- Half sachet tomatoe paste
- Olive oil
- Tsp dried oregano
- Tsp dried basil
- Black pepper and Himalayan salt
Place pasta in a pot with a small amount of Olive oil and a few grinds Himalayan salt. Bring water to a boil and allow to cook.
Whilst the pasta cooks ( I was multitasking in between here, hence the fun messiness) Prep onion and garlic. Then add to a saucepan with tsp olive oil, half tsp of oregano and half dried basil.
Whilst the onions cooks, place can Asparagus in a colander. Rinse gently with water. Then place aside to drain completely, sprinkling half of oregano and basil to season.
Allow onions to cook through, add tomatoe paste and allow to cook a little longer. Creating rich flavors with the herbs. Add cherry tomatoes on one side of pan, the asparagus on the other and allow to cook on a simmer for 10 mins.
Lastly, add can of Italian tomatoes and stir together. Break off more than half of fresh basil. Place on top. Cover the saucepan and allow to cook for 10 mins on a low low heat.
Stir together with rinsed and drained pasta. Using the other bit of basil to serve.
