Vegan Cream of Tomatoe Soup

Made this for my momma and she said it tasted as good as a 5-star restaurant. With only a few easy to find ingredients and its vegan!! YAY!

Vegan Cream of Tomatoe Soup 

  • 2 cans Italian styled tomatoes
  • handful soaked cashews
  • tbs olive oil
  • 2 big garlic cloves
  • 1 yellow onion
  • handful fresh basil
  • tsp oregano
  • half tsp thyme
  • 2 tbs tomatoe paste
  • 500ml veggie stock
  • pepper & salt

Add the onion and garlic into a deep saucepan (or pot) with heated olive oil. Allow to cook through, without burning.  Whilst that cooks, blend the veggie stock and cashews to create a creamy liquid. Add 1 can of the tomatoe. Blend again.
Add the mixture to the saucepan, adding all herbs and allow to cook on a low heat for 20mins. Until the flavours permeate.

Serve with fresh basil and Bean Croutons.
